Chefs in the finest restaurants freeze their pâtés, offal, foie gras and meat cut into small portions, then taken out of the ice box to cook at the last minute.
Posts abound on the subject! Whether raw, semi-cooked or cooked, foie gras is perfectly suitable for freezing. However, there is one condition: it must not have already been thawed! Indeed, as with all meat items, refreezing risks the proliferation of potentially pathogenic bacteria, which can lead to food poisoning in the most severe cases.

However, if you have opened a jar and wish to store some of the foie gras for another time, just follow exactly the same process as for the slices of semi-cooked foie gras, it works! Make sure, though, that you freeze it as soon as possible after opening.
Foie gras is fragile and requires slow thawing. For an optimal taste experience, take it out of the freezer 24 to 48 hours before eating it by placing it in the bottom compartment of the fridge.
