Our cassoulet simply needs heating for a few minutes in the oven in a dish (Gas mark 6-7, around 200°C), with a scattering of breadcrumbs on it to brown, or can also be warmed in a pan.
The origin of cassoulet dates back to the Middle Ages. At its base then it is a stew - a dish of meat in sauce that simmers for a long time over the fire. At the end of the 14th century, this stew was cooked in an earthenware dish with a particular shape, the 'cassole', which then gave its name to the legendary dish.
Cassoulet as we know it today appeared at the beginning of the 16th century, when the original broad beans were replaced with smaller, more delicate cannellini ones.
