Preparing your own foie gras is a pleasure for every amateur or professional cook. Foie gras is the star of starters in all French gourmet restaurants, in terrine or pan-fried. We offer you a top quality frozen foie gras ( 1st choice), ready to be cooked (deveined).

It is a raw foie gras, which you must therefore cook by frying it or cooking it in a terrine. It is frozen to facilitate transport and allow a better conservation (you can keep it 1 year in the freezer before cooking), and a few days in the refrigerator.

To defrost a whole raw foie gras, simply place it in the refrigerator in its plastic bag and leave it there for 12 hours to slowly defrost, or you can always use your microwave on the defrost setting. Then, you will prepare and cook it exactly like a fresh foie gras. 

1. What is deveined duck foie gras?

Deveined foie gras is raw foie gras from which the main veins have been removed, which is a process that can only be done by hand and is tricky to perform. This preparation makes it easier to prepare and saves you time.

• Ensures tasting without fibrous pieces. 

2. The “1st choice”: A guarantee of quality

1st choice foie gras refers to a high quality liver, carefully selected according to strict criteria:

Appearance: Whole liver, without visible hematomas, with a uniform color.

Weight: Generally between 450 and 600 grams, a guarantee of optimal maturity. A duck foie gras of around 500g is the ideal weight.

Texture: Firm but supple to the touch.

These criteria make it a product favored by chefs and demanding amateurs.

3. How to cook your raw foie gras? 

There are many ways to cook raw duck foie gras, the three most common being steaming, baking in a bain-marie, and pan-frying. But there are others, such as cooking in a cloth, cooking in salt, etc. 

You can find many recipes on the internet and let your imagination run wild by combining foie gras with many sauces or products (foie gras goes very well with fruit for delicious sweet and salty flavors).

If we want to keep it simple, there are 2 types of preparation for raw foie gras:

Cold chain

At Foie Gras Gourmet, we use express carriers (DHL, Fedex, etc.) to deliver the frozen foie gras to you in the shortest possible time. In addition, we use packaging that allows the product to be preserved at a low temperature as much as possible. However, we cannot guarantee 100% of the cold chain during the journey; for this reason, we recommend checking that the raw foie gras is properly frozen upon receipt and not refreezing it if it shows signs of thawing. If in doubt, we suggest keeping it in the refrigerator and consuming it quickly after receipt.
