The curiosity is legitimate: the microwave is seen as a quick way to warm up and prepare dishes. But I always answer like this: canned foie gras has already been cooked and should never be cooked again. Only fresh or frozen foie gras should be cooked.
It is possible to prepare foie gras in the microwave, especially when you have little time. By strictly following the recommendations, you can achieve a delicious result in just a few minutes, ideal for those who seek convenience without sacrificing flavor.
Traditional cooking of foie gras
Fresh foie gras is a duck or goose liver, an iconic product of French gastronomy. Top chefs compete in creativity to delight their customers. In fine restaurants, foie gras is cooked in a bain-marie or in a low-heat oven, methods that require time and precision and allow for a refined texture and deep flavors.
Slow cooking in a bain-marie is the most respectful and traditional technique, especially for high-quality foie gras. It intensifies the aromas, offers a silky texture, and although it requires patience, guarantees a result worthy of haute cuisine. That is why I recommend it.
However, some chefs and amateur cooks have also experimented with microwave cooking. This method, although less classic, can produce a delicious result in a few minutes. It does not replace the elegance and finesse of traditional methods but is an interesting alternative for those seeking simplicity and speed without giving up the pleasure of foie gras.

Is it the same process for frozen fresh foie gras?
The process is a bit different with frozen fresh foie gras because before cooking it in the microwave, it must be slowly thawed in the refrigerator (12 to 24 hours depending on the size of the lobe). Avoid thawing it at room temperature or in the microwave, as this melts the fat and drains the juice.

Step-by-step recipe to cook fresh foie gras in the microwave:
Ingredients
- 1 fresh whole duck foie gras (≈ 450 g)
- 8 g of salt
- 2 g of white pepper
- Optionally 1 tbsp of liqueur (Armagnac, Cognac, or Port)
Preparation

- If you have a cooking thermometer, use it. Stop cooking when the foie gras reaches 55–58 °C (131-136 °F) internally for a melting texture, or up to 60–62 °C if you prefer a slightly firmer terrine.
- Press and let cool with a weight on the foie, then refrigerate for at least 12 hours.
- And above all, what not to do: never reheat the same piece twice, do not leave it uncovered in the microwave, and never “overcook” fresh foie gras.
Result: a smooth, shiny foie gras worthy of the finest tables.
The foie gras is then ready to be enjoyed: just bring it to the ideal temperature by placing it in the refrigerator for a few hours. You can then keep it for a few days in the refrigerator, in its terrine, covered with plastic wrap.

Can you cook canned foie gras in the microwave?
Never! The best way to enjoy these semi-cooked or canned foie gras is to eat them as they are, since they are already cooked. Keep them refrigerated, then take them out about 30 minutes to 1 hour before serving, depending on the temperature, to facilitate slicing and fully enjoy their texture and aromas. Then just spread on bread and enjoy!
