Raw duck foie gras slices, easy to prepare

Foie gras slices are individual portions of duck or goose liver cut into thick slices, similar to small fillets. You will find about a dozen in a 600 g pack. The term escalope comes from French and refers to a piece of meat shaped like a leaf, generally of uniform thickness. In the case of foie gras, these slices usually have a diameter of about 5 to 8 cm and a thickness of 1 to 2 cm.

A preparation you will serve hot: about ten pan-fried foie gras slices

1. Do not thaw raw foie gras already sliced into escalopes

If you buy a whole frozen raw foie gras, it is necessary to thaw it in the refrigerator in order to slice it.

On the other hand, frozen foie gras slices must be cooked directly without thawing. This helps preserve their shape, limit fat loss, and achieve a nice outer browning with a melting center. Thawing makes them more fragile and increases melting.

2. Cook the foie gras slices

Place the still frozen slices immediately in a very hot pan, without adding any fat. Sear them over high heat for about 30 to 45 seconds on each side to get a nice color. Then continue cooking over low heat for 1 to 2 minutes per side, depending on thickness, to keep a melting center.

It is normal for the slices to shrink slightly during cooking: some of the natural fat escapes.

3. Season the foie gras slices

Drain them briefly on absorbent paper, then season at serving time with fleur de sel and freshly ground pepper.

Serve them with a sweet and tangy touch that balances their richness: reduced balsamic vinegar, fresh figs, caramelized apples, or fruit chutney.

A short and quick cooking preserves the melting texture and the delicate aroma of the foie gras.

Shipping of frozen raw foie gras

In France we deliver with Chronofreeze.

In Belgium and Luxembourg, we deliver with Chronofreeze for purchases of frozen goods over 100 € or otherwise with Chronofresh at controlled temperature between 0 and 4 °C, to maintain the cold chain. The foie gras must then be kept in the fridge and consumed quickly.

In Spain, we deliver with Chronofresh at controlled temperature between 0 and 4 °C to maintain the cold chain. The foie gras must then be kept in the fridge and consumed quickly.

For other European countries, we use express carriers (DHL, UPS) to deliver frozen foie gras as quickly as possible (express next day before 1 p.m.). Furthermore, we use packaging that keeps the product at the lowest possible temperature. However, we cannot guarantee 100% the cold chain during transit; therefore, we recommend checking that the raw foie gras is properly frozen upon receipt and not refreezing it if it shows signs of thawing. In doubt, we suggest keeping it in the refrigerator and consuming it quickly after receipt.
