Pré aux Canards, authentic and exceptional foie gras
The IGP (Protected Geographical Indication) designation for Southwest France guarantees compliance with strict specifications, whose enforcement is overseen by INAO (the National Institute of Origin and Quality), which ensures that numerous precise criteria are met. For example, the ducks must be raised and their foie gras must be preserved in the Southwest, thereby avoiding excessive transportation of the products. The ducks must be free to roam and receive a corn-based diet.
The ducks are raised in the Southwest near the facilities where the products are preserved, making it easier for external organizations to carry out frequent quality checks to ensure compliance with the specifications (impeccable hygiene in the raising and production facilities, traceability, and wide open spaces for the ducks).
Committed to upholding the spirit of “Homemade”
The whole “Pré aux Canards” foie gras is produced by a cooperative located in the south of the Tarn department, in the Haut-Languedoc Regional Nature Park. This cooperative’s strength lies in managing the entire supply chain, from raising the ducks by cooperative members in the Tarn, Aude, and Aveyron departments to preserving the products in a modern facility where the cooks nonetheless use traditional methods.
All “Pré aux Canards” foie gras is prepared in keeping with the spirit of “homemade” cooking, which requires a certain level of rigor but guarantees flavorful and generous foie gras.
