    What is a block of duck foie gras?

     Foie gras is the liver of specially fattened geese or ducks which is used as a table delicacy, most notably in the form of a paste (pâté de foie gras).

    Foie gras is a very popular dish in France, probably the finest and most delicate taste one can experience.

    Foie gras can be enjoyed in many ways (French people often like to make their own foie gras terrine for special occasions like Christmas). But everyone keeps a few blocks of foie gras in a corner of their refrigerator, ready to be enjoyed alone in front of the television or with friends and taking less time to prepare than boiling an egg! 

    The block of foie gras is worked into a thin paste. It is simply emulsified foie gras, blended with a seasoning. Pieces of lobe from the foies gras can also be added. This will be mentioned in the name of the product (eg block of foie gras with pieces or “morceaux”). These “morceaux” will then be clearly visible when cutting foies gras. 

    The best duck foie gras blocks are made simply with emulsified foie gras, salt and pepper and contain no preservatives, artificial colors or flavors. 

    There are as many options as there are brands of foie gras. Some people like their foie gras in its natural state, while others like it seasoned with Armagnac or white wine, for example. 

    If you prefer it plain, don't hesitate to compliment it with a sweet flavor such as onion confit or fig chutney: it's a quick and easy way to enjoy foie gras. In the South West, the local tradition is to spread a block of foie gras on a cereal, walnut or fig bread and enjoy with a glass of good wine. Sauternes is a favorite accompaniment! 

    The blocks of foie gras are packed in a can, and this packaging guarantees perfect preservation, making it the perfect gift.  

    In the best restaurants, cocktail parties and receptions, it is very popular to find block foie gras served on small pieces of toast, alongside toast topped with other fine foods like caviar, oysters or lobster. 

    Comparing pâté and foie gras is a bit like comparing black lump fish with caviar. 

    Block of duck foie gras, with its refined taste and the pleasure it brings, is synonymous with exceptional delicacies and sensations.  As with all treats, it should be consumed in moderation but the fat it contains is healthy fat. 

    In fact, the Queen of England asked for foie gras on each of her visits to France and she was served Espinet foie gras.
